Ingredients:
3/4 cup chopped cilantro
Juice from 2 limes
1/3 cup olive oil1/2 Tbs garlic salt
1 tsp. cumin3 cloves garlic minced
1 tsp chopped jalapeno (or as much as you like for spice)
Pork tenderloin
Mix all ingredients (except tenderloin) in a bowl. In a large dish place your tender loin and pierce with a fork several times on both sides. Sprinkle with salt and pepper. Pour the marinade over the tenderloin and rub into the meat making sure it is fully coated. Let sit for at least 3 hours and up to overnight in the fridge.
Now your pork is ready to eat! If you do decide to make tacos from it, here is my personal recipe for guacamole:
(Serves 2-3)
Ingredients:
1 ripe avocado
1/3 cup salsa (I prefer Pace Picante medium salsa)
Juice from 1 small lime
Garlic salt to taste (start with 1/2 tsp and go from there)
1/2 tsp jalapeno or more for more heat
Mix all the ingredients in a small bowl until it reaches the desired smoothness. Serve on your tacos with salsa and your favorite toppings.
