First off I LOVE soup! I also LOVE Broccoli Cheese Soup! I found this recipe and over the years modified it to my style. I hope you enjoy it too!
Broccoli Cheese Soup
1 cup chopped onion1/2 cup sliced celery
2 tablespoons margarine or butter
1 cup hot water
1 chicken bouillon cube
3 cups milk
1 package of chopped frozen broccoli (or fresh!)
12 ounces of beer
1 pound Velveeta
3 tablespoons flour
In large pot over medium-high heat, saute onion and celery in butter until tender. In small liquid measuring cup, combine water and bouillon; set aside. Add milk, cheese, beer, broccoli and 3/4 cup of broth to onion and celery mixture. Cook, stirring constantly (if you don't the cheese will burn to the bottom of the pan), until cheese melts. Combine remaining 1/4 cup of broth and flour; stir until smooth. Add flour mixture to soup, stirring constantly. Cook, stirring constantly, until slightly thickened.
