Mission Menus Challenge

We have to purchase Mission tortillas in bulk at Costco around our house because we eat so many of them. My kids like to just snack on them plain! It is GREAT and super easy!

All recipes must:
• Must include Mission Flour Tortillas
• Be original
• Feed a family of five for $10 or less

Here is my favorite freezer Beef Enchiladas recipe:

1 pound of ground beef
1 onion, diced
Chili Powder
8 Mission Flour or Corn Tortillas
Grated Cheddar cheese
Enchilada sauce
Olives (optional), sliced

Brown ground beef and onion. Add Chili Powder to taste. Place beef mixture and sliced olives on tortilla with small amount of cheese. Roll and place in a freezer safe container. Pour enchilada sauce over the top and top with cheddar cheese. Freezer

On cooking day: Thaw and bake at 350 degrees for approximately 30 minutes or until cheese is melted on top! We always top with sour cream too after baking!
